Exceptional Cask Selection Release XXIII

FOURSQUARE COVENANT represents the latest bottling from Foursquare Rum Distillery in St Phillip, Barbados. The twenty-third release (Mark XXIII) in the award-winning Limited Edition Exceptional Cask Selection series, and at eighteen years old, it is the oldest distillery released bottling to date.

 COVENANT is a Single Blended Rum in that it is a blend of heavy and light marques of Rums distilled in the copper double retort potstill and the continuous twin column stills of Foursquare Distillery. Entirely matured, blended, and bottled in Barbados, and presented at 58% alcohol by volume, without chill-filtration, at its natural colour, and free from sweeteners and other flavourings.

Matured exclusively in ex-bourbon cask American white oak, this long-aged bottling was formed from a blend of Rums distilled in 2004 and 2005. An initial spell of ten years in cask led to it being vatted, and then after a considered reduction in alcoholic strength, it was re-casked for a further eight years before being bottled.

Tasting Notes from the Distillery: 

Nose: Crisp pineapple, sultanas, and juicy mango. Banana bread, cacao, toffee and delicate notes of candied ginger.

Palate: Sweet caramel, which quickly gives way to rich, juicy dates, more ripe mango, damson jam, candied orange, and dark chocolate.

Finish: A delicate, dry tannic finish, dried hazelnuts, black tea, and delicate eucalyptus. Hints of burnt rubber and peppery ginger.

About the distillery

The Seale family, owners of Foursquare Distillery, have been in Barbados since 1650, and boast 5 generations of rum-makers dating all the way back to 1820.

The distillery itself was a mostly dilapidated sugar factory until it was purchased in 1996 by Sir David Seale who invested heavily in state-of-the-art equipment and renovation. Now Foursquare is at the cutting edge of rum production, boasting a three-column vacuum still and a modern pot still, allowing for the production of both light and heavy styles of rum.

Foursquare has forged a reputation for quality and integrity which means no additional sugar and flavourings are added to any of their rums, preferring instead to focus on production methods and long cask ageing to achieve their signature style.

Alongside Foursquare Rums, the distillery is also behind the Doorly's and The Real McCoy brands, and produces a delicious Rum Cream Liqueur made with coffee, cream and light rum.
