Drawing on the finesse of dry Andalusian fortification, Kilchoman’s 2023 Fino Sherry Cask release showcases the distillery’s farm?to?bottle ethos with a lean, saline character.
This limited?edition single malt spent its first five years in 20 carefully selected Fino butts from Bodega José y Miguel Martin, imparting crisp nutty notes and a refreshing maritime edge.
Production:Unpeated and peated Kilchoman spirit is distilled on site, then matured exclusively in Fino Sherry butts for a minimum of five years before bottling at 50% ABV.
Pairing Suggestions:Ideal alongside shellfish platters and sushi, it also brightens goat cheeses and light tapas with its crisp acetic lift and mineral drive.
Tasting Note:The nose opens with dried herbs, sea spray and toasted almonds. The palate is driven by precise peat smoke, candied citrus peel and honeycomb, finishing crisp with salted oak and cedar spices.
