The rum is sourced from column-distilled mash using Mount Gay’s fully restored copper Coffey Still, honouring Aeneas Coffey’s early 19th-century design. After distillation, the new make is transferred to heavily charred ex-bourbon casks and aged in Barbados’ warm, humid climate for four years, allowing oak spice and honeyed depth to integrate.
