Crafted in Park City, Utah, High West Distillery is the brainchild of Jane and David Perkins, who founded the distillery in 2006, drawing inspiration from a trip to Maker’s Mark. Nestled in the stunning Wasatch Range, High West became the first legal distillery in Utah since 1870, and their rustic saloon is the only ski-in whiskey bar in the world.

High West American Prairie Bourbon is a tribute to the wild beauty of the American landscape, named after the vast 5,000-square-mile wildlife reserve in northeastern Montana. With 10% of post-tax profits from this whiskey going towards preserving this remarkable reserve, every sip helps support an inspiring conservation effort.

This small-batch bourbon is a blend of two carefully selected straight Bourbons: a 6-year-old from Seagrams in Indiana, made with a mashbill of 75% corn, 20% rye, and 5% barley malt, and a 10-year-old from Four Roses, with a higher rye content at 35%. The combination of these two results in a bourbon that’s as rich in flavour as it is in history.

Tasting Note: On the nose, American Prairie Bourbon offers inviting notes of light caramel, mingling with mixed citrus peels and a hint of cinnamon. The palate brings a lovely balance of sweet, toasty spices, vanilla, cherries, and the earthy richness of manuka honey. The finish is long and satisfying, leaving traces of peanut brittle, chocolate orange, and delicate hints of dried red berries. This bourbon is light and smooth, with just the right touch of oak. It’s an excellent choice for those who enjoy a well-balanced whiskey with subtle complexity and a touch of sweetness.
