A richly indulgent 5-Year-Old single malt that showcases the artistry of whisky-making.
Crafted with mainland peat from St. Fergus, this whisky carries a sweet, smoky essence with a phenolic content of 35 PPM. The extended 160-hour fermentation process gives the spirit a luscious, fruit-forward character that matures beautifully in carefully selected Sherry oak casks.
Matured first in American oak ex-Bourbon barrels before being finished in Pedro Ximénez and Oloroso Sherry puncheons, this whisky is a masterclass in balance. The sherry casks lend decadent notes of chocolate, dark fruits, and coffee, while the sweet smokiness from the peat ties everything together seamlessly. Bottled at 48% ABV, it’s a bold dram that still carries finesse, with natural colour and no chill filtration, ensuring a pure and authentic taste.
Tasting Note:On the nose, The Sherry One entices with notes of cedarwood, cigar box, and butterscotch, mingling with hints of mocha, orange peel, honey, and a dollop of plum jam. The palate is equally inviting, delivering layers of dark chocolate, smoked honey, and rich mocha, alongside figs, treacle, and burnt sugar. As you sip, delicate puffs of peat smoke weave through these flavours, creating a truly mesmerising experience.

At the heart of this journey is none other than renowned Master Distiller Billy Walker, guiding his team at The GlenAllachie Distillery in Speyside, Scotland. The name ‘Meikle Tòir’, meaning ‘big pursuit’, reflects the relentless dedication to crafting a truly unique peated single malt whisky—a rare style in Speyside, yet one that promises to capture the senses.
Since 2018, GlenAllachie has produced only 100,000 litres of this prized peated spirit annually, making each small-batch release a testament to quality over quantity. Using mainland peat to create a distinctive smoky, oaky sweetness, the spirit undergoes a process of extended fermentation, precise distillation, and expert maturation. Each cask is hand-selected by Billy Walker and his trusted team, ensuring only the finest whisky makes its way into the bottle. The result? The packaging, too, tells the story of its origin.
