This Mezcal is made from eight-year-old agave Espadin grown in Santiago Matatlan, Oaxaca. The agave is then cooked slowly for up to five days, fermented for eight days in wooden barrels, and distilled in a copper still. The result is a mezcal with a subtle smokiness and refined character.
