Foursquare Convocation ECS XXVIII, 62.0%

Convocation ECS XVIII is the twenty-eighth release in Foursquare’s renowned Exceptional Cask Selection. This single-blend rum combines copper-pot and column-distilled spirits, each matured for 14 years in ex-Bourbon and ex-Madeira casks. United at a formidable 62% ABV, its layers of juicy fruit sweetness, spiced oak and toffee make for an immersive tasting experience; perfect for connoisseurs and adventurous newcomers alike.

Production:

Each of the three component rums (one aged 14 years in Bourbon, one aged 14 years in Madeira, and a dual-matured spirit in Bourbon and Madeira) is distilled from fermented molasses in small batches. Lighter rums are drawn from the triple-column vacuum still; heavier, more full-bodied spirits emerge from the custom copper pot still. All ageing takes place in a sunlit, open-air warehouse, allowing for delicate interaction between spirit and oak.

Pairing Suggestions:

Serve alongside rich dark chocolate truffles or a grilled pineapple and halloumi salad, where the rum’s fruit sweetness and subtle spice will complement each bite. It also shines next to spiced jerk chicken tacos or sticky glazed pork belly with mango salsa, the bold flavours harmonising beautifully with its oaky vanilla and warming ginger notes.

Tasting Note:

On the nose, Convocation presents juicy sultanas, fresh pineapple and bright orange peel, underpinned by soft butterscotch and gentle spices of nutmeg, cinnamon and ginger. The palate delivers a luscious blend of underripe pineapple, green banana, ripe plum and more sultanas, rounded by creamy toffee. The finish unfolds as a warming embrace of oak, lingering with dates, raisins, cinnamon and a gentle, grippy astringency that invites another sip.
