Madre Mezcal is produced by the Morales family just outside San Dionisio in Oaxaca. Espadín agave is harvested at cooked over hot stones in earthen pits, crushed using a traditional stone wheel, fermented in open-air wood containers with wild yeast and distilled with wood fires.
A single varietal exploration that allows the full spectrum flavor of Espadin agave to shine through. The bright and earthy character of Espadin is complemented by a natural smokiness from the artisanal production process, creating a spirit that adds new levels of complexity to any cocktail.
