The Traditional Mead from Saxn?t Meadery is a faithful homage to ancient English mead-making, blending pure honey with spring water and a hint of brewing sugar to evoke the warmth of medieval feasting halls.
This small-batch artisan mead stands out for its smooth yet robust character: the unadorned honey profile offers rich floral notes and a gentle undercurrent of spice, making it ideal for slow sipping or pairing with hearty fare.
Traditional Mead is produced by combining locally sourced honey, spring water and brewing sugar in small oak vessels. Wild and cultivated yeasts drive a cool fermentation, preserving delicate aromatics. After fermentation, the mead matures briefly on the lees to develop body and depth.
It pairs beautifully with aged cheddar or pâté, and complements roasted meats such as venison or pork. Vegetarian options include nut-crusted squash or mushroom stew, which balance its honeyed warmth.
The nose presents fragrant blossoms of summer honey and baked biscuit. On the palate, rich honey notes unfold alongside a subtle spice, culminating in a long, warming finish.
