Stauning Dirty Bastard is a bold triple-matured whisky that pushes the boundaries of rye & barley character. After three years in American virgin oak, the spirit is transferred sequentially into mezcal and tequila casks before finishing in stout barrels. The result is a richly layered dram of spice, cocoa and smoky beer influence.
What makes Dirty Bastard exceptional is its inventive cask regimen and local provenance: floor-malted Danish rye & barley, four-day open-floor fermentations, small direct-fire pot still distillation, and three distinct maturation stages. This whisky wears its craftsmanship proudly, offering intense depth and a unique Nordic twist on stout-finished spirits.
Grains are floor-malted on-site, then mashed using crystal-clear water filtered through sand and carbon. A long four-day fermentation in stainless steel washbacks develops fruity esters. Double distillation in 24 small, direct-fire copper stills preserves character, before the new make spends three years in virgin American oak. It is then matured in mezcal and tequila casks, and finally in stout casks for extra richness.
Enjoy Dirty Bastard with smoky barbecue ribs or a dark chocolate stout cake to echo its beer-cask roots. Vegetarians can pair it with roasted beetroot salad sprinkled with toasted nuts or a blue cheese tart for a contrast of creaminess and spice.
The nose greets you with toasted grain, cinnamon and dark chocolate. On the palate, roasted nuts and tobacco mingle with chili-spiced malt and subtle vanilla. The finish lingers on coffee bitterness, rich cocoa and a wisp of smoke.
