The Heart Cut Fielden #16 is a bold, sherry-finished English rye whisky finished for just over two years in a 45-year-old ex-Solera Oloroso cask from Sanlúcar de Barrameda. Limited to 1,109 bottles and presented at natural cask strength, this 100% English rye celebrates regenerative farming and heritage grains while delivering a dessert-like, maritime-tinged richness.
Fielden #16 stands apart for its rare mashbill and dramatic cask story: three quarters heritage landrace rye grown in Oxfordshire combined with floor-malted rye from Warminster Maltings creates a textured, spiced backbone, while the coastal Oloroso solera cask imparts Atlantic minerality and deep, nutty Oloroso sweetness.
Fielden #16’s salted-caramel warmth and soft fruit notes marry well with sticky, savoury dishes such as roasted pork belly glazed with maple and sea salt or a pecan-topped dessert; for a lighter pairing the dram complements orange-zested sticky toffee pudding or banana and walnut desserts, while craft pale ales with citrus and pine character will cut through the sweetness and highlight the rye spice.
The nose offers salted caramel, golden honeycomb and a hint of honeysuckle; the palate deepens into vanilla ice-cream richness, overripe apricot, pecan-pie sweetness and crisp banana-chip texture, before settling into toasted walnuts, oak sawdust and a playful fizz of kola cubes with a final whisper of smoked Maldon sea salt.
